Belcolade Belgian chocolate is known as one of the top two Belgian chocolates purchased and used by European chefs and patissiers. Criollo beans are native to Venezuela and are renowned for producing chocolate with rich, intense flavours. Their reputation dates back to the 17th century with Venezuela was the world's leading cocoa producer. Belcolade's Venezuela 43% is an original milk chocolate of strong character. Savour intense flavours of caramel, hazelnuts and butter accompanied by the impression of roasted cocoa and a well defined vanilla aroma. Crafted from Criollo beans, this milk chocolate offers a strong cocoa experience with a touch of nuts and roasted beans, a true taste of Central America. Low viscosity. Applications: dipping, enrobing, hollow figures, moulding, thin enrobing, panning.

 

The drops are perfect for adding to cookies, or using to decorate bars or cakes. Drops melt easily for icing or candy.

Note: Due to high temperatures or high humidity, chocolate products may melt during shipment. We only ship chocolate during fall/winter/spring months when the temperature is cooler. However, we cannot guarantee that chocolate will not melt during the shipping process. Chocolate that has encountered melting will appear dull coloured or may have greyish/white streaks and dots. This is known as 'bloom' and indicates that the cocoa butter is separating from the chocolate and is rising to the surface. Although not the prettiest in appearance, chocolates with bloom are fine to eat with little impact to the texture or taste of the chocolate.

    I used that to create simple milk chocolate bars. Using 2/3 of this one with 1/3 of Belcolade 64% - Peru, gave me good shiny (using polycarbonate mold) and extra snappy bars. However the mix was slightly too sweet to my taste. Was extra easy to temper using the Mycryo technique. The final viscosity leads me to think it would be good for hollow moulding, will try.
