CALLEBAUT CHOCOLATE

Callebaut is one of Euope's oldest chocolate manufacturers and is a staple of many top chefs, chocolatiers and bakers. Each chocolate recipe is unique and is produced with blends of premium grades of cocoa beans from the world’s best harvests. Callebaut only uses 100% pure cocoa butter and a dash of natural Bourbon vanilla that rounds off the taste with a slight sweet hint.
Callets are round drops of couverture, similar to chocolate chips.  This format makes them easy to melt or temper, weigh and store. Callets are especially popular with professionals due to their ease of use.

We offer Callebaut chocolate callets in 2 lb (906 g), 5 lb (2.3 kg) and 22 lb (10 kg) sizes. Note that for the 2 lb and 5 lb product offerings, we have repackaged this product from a larger packaging size. As a result, the 2 lb and 5 lb product is not in the original manufacturers packaging. The 22 lb product is in original Callebaut packaging.

Cacao Barry is the French division of the Barry Callebaut company.  This rich cocoa powder displays an intense, glowing red colour and provides a deep chocolate flavour.  Experiment as a covering for truffles or as powdering for desserts to add a fine copper colour.  A favourite of bakers.

Cacao Nibs

Cacao nibs are from roasted and hulled cacao beans.  The first thing that chocolate manufacturers do with cacao beans is roast them.  Roasting brings out the colour and flavour of the bean into what will eventually become chocolate. After roasting, the shells are removed from the cacao beans.  The inner cacao bean 'meat' is broken into small pieces called cocoa nibs.

Cacao nibs are crunchy, contain a dark cocoa smell and have a slightly bitter, dark chocolate/coffee taste.  An all-natural ingredient that adds great texture and cocoa flavour.  Can be used as a substitute for chocolate chips or nuts in ice creams, cereals, trail mixes, smoothies, etc.
