The term 'plain vanilla' certainly does not apply to the vanilla bean. After using real vanilla beans, it is easy to understand how this spice has become the cornerstone of pastry and baking. Vanilla beans are the most costly form of vanilla flavouring, but are without question the best. 
 
We import our vanilla beans directly from Madagascar and Papua New Guinea.  This allows us to provide our customers with the highest quality vanilla beans at the best prices possible. 
 
Our Madagascar Bourbon vanilla beans are rich in natural vanillin and carry the classic vanilla flavour.  These beans have a smooth, rich, sweet flavor and are the thinnest of the vanilla beans grown.  Bourbon beans are highly prized by professional pastry chefs and bakers. Our Madagascar beans carry the well-earned reputation as being premium quality products and exhibit a sweet vanilla aroma that is almost caramel in flavour. 
 
We also carry Tahitian vanilla beans from Papua New Guinea (PNG).  Tahitian beans are typically more plump than Bourbon beans and contain less vanillin.  This results in a flavour quite different than Madagascar Bourbon beans.  Our Tahitian beans carry a sweet, floral flavour with undertones of anise and licorice.
 
Our Pure Vanilla Powder is made from dried and ground Madagascar vanilla beans are also available in varying sizes.  Our vanilla powder is 100% pure with only a single ingredient - ground vanilla beans.

How to Store Vanilla Beans:
Keep the vanilla in an airtight container (we recommend a glass jar) at room temperature and away from direct sunlight. Kept this way, it can be stored for 12 months. Do not worry if you see whitish powder on the surface of the beans for those are vanillin crystals - gold of the vanilla bean!

Madagascar Bourbon Vanilla Beans - GRADE A

Our Bourbon vanilla beans are grown on the island of Madagascar.  These beans are smooth, rich and sweet.  Bourbon beans are highly prized by professional pastry chefs and bakers.

PNG Tahitian Vanilla Beans - GRADE A

Tahitian vanilla beans are the most plump of the various species of vanilla bean.  They contain the lowest amounts of vanillin, but are very aromatic, with complex floral flavours.  Many fans of Tahitian beans also describe anise and licorice type flavourings within the bean.

Our pure ground vanilla is made from top quality dried and ground Madagascar vanilla beans.  This is 100% pure ground vanilla – there are no additional sugars or additives.  Ground vanilla beans are the only ingredient in this premium product.  

Be aware that not all vanilla powders are 100% vanilla beans.  Many other vanilla powders contain unnecessary additives and sugars.  If you are seeking quality, insist on 100% pure ground vanilla.

Homemade Vanilla Extract Recipe

1 – Bottle of vodka or dark rum (500 mL)
6 – Vanilla beans

1.  Split vanilla beans and cut into ½ inch pieces.
2.  Using a clean bottle (ideally with dark glass), mix alcohol and vanilla beans.
3.  Shake bottle everyday for 30 days.
4.  After 30 days, vanilla extract is ready.  Note that the longer the beans steep within the alcohol, the stronger the vanilla flavouring.
5.  Optional – extract can be strained through a coffee filter to remove bean pods and seeds.  However, lots of people keep the pod and seeds within the extract to continually build flavour.


Vanilla Bean Cupcake Recipe

Yield - 20 to 22 cupcakes

¾ cup – Milk
1 – Vanilla Bean
2 cups – Flour
2 Teaspoons – Baking Powder
1 Teaspoon – Salt
1 cup – Sugar
½ cup – Butter (room temperature)
1 – Egg (room temperature)

1.  Split vanilla bean lengthwise
2.  In a small saucepan, heat milk and vanilla bean together until the milk begins to boil.  Remove from heat and let cool (approximately 1 hour).
3.  Remove vanilla bean from cooled milk.  Scrape seeds from vanilla bean and add seeds to milk.  Remaining bean pod can be discarded.
4.  Preheat oven to 350 F.
5.  In a bowl, whisk together flour, salt and baking powder.
6.  In another bowl, cream butter and sugar until light and fluffy.  Add egg and beat well.
7.  Add milk mixture and flour mixture in alternating portions to creamed butter mixture until well combined.
8.  Spoon batter into cupcake tins – about ¾ full.
9.  Bake 15 – 20 minutes.
10.  Cool on a wire rack.
