The world's first blond chocolate!  Dulcey is a new type of chocolate from Valrhona.  Dulcey is a smooth, creamy chocolate with a velvety, enveloping texture and a warm, blond color. The first notes are buttery, toasty and not too sweet, gradually giving way to a hint of salt. In the Caribbean islands, cacao trees have grown for generations in rich, clay loam soils often referred to as 'chocolate land'.  Produced by small, island farms, Valrhona's Caraibe is a blend of Trinitario cacaos that results in an exceptional taste of dried fruit.  Ideal for pastry, chocolate fillings, moulding, enrobing, and icing. Guanaja develops extraordinary bitterness in this masterful blend of Criollo and Trinitario beans that reveals a whole aromatic and complex range of fruit, coffee, molasses and floral notes. Equatoriale Noire 55% is known for its balanced taste and becuase it is easy to work with.  While suitable for all uses, this great Valrhona classic is particularly good for coating.  This chocolate is in a format that Valrhona calls 'Les Fèves' - these are small chocolate discs that are easier to work with than bulky chocolate blocks.

Unlike caramel-flavored milk chocolates made with caramelized sugar, Valrhona's Caramélia uses genuine dairy-based caramel (from real skim milk and butter) as a main ingredient. The result is a particularly silky smooth milk chocolate that maintains a clear cocoa note woven together with vibrant hints of caramel. Valrhona's Jivara contains a pronounced taste of cacao with vanilla and malt end notes. Valrhona's Ivoire white chocolate is only very lightly sweetened and has the delicate flavours of milk and vanilla.  Ivoire provides a fine, melting texture and provides perfect balance for all recipes.  This chocolate is in a format that Valrhona calls 'Les Fèves' - these are small chocolate discs that are easier to work with than bulky chocolate blocks. Cacao nibs are crunchy, contain a dark cocoa smell and have a slightly bitter, dark chocolate/coffee taste.  An all-natural ingredient that adds great texture and cocoa flavour.  Can be used as a substitute for chocolate chips or nuts in ice creams, cereals, trail mixes, smoothies, etc.
